
2018. I am truly passionate about saffron, a spice that has fascinated me for years. I was honoured to be part of this project that Anna Jung of Tahmina reached out to me for in 2018. Tahmina Tea was founded in 2017 with a vision to connect Afghan women and saffron farmers with international markets. They source the saffron directly from Afghanistan while supporting the local community.
It was an absolute privilege to shoot large amounts of their beautiful saffron, the worlds most expensive spice, the colours and frames of the association still take my breath away. The quality of the saffron was exquisite, quite the best I had ever used. I created a couple of desserts also using this delicate spice, one of my favourite ingredients to use in Indian inspired desserts. Such beautiful flavours, such an enriching experience.
